Story of Sisu

Explore one of our signature cocktails “Story of Sisu” presented to you by Beverage Director Thibaut Idenn.



  • 1.5 oz. Iwai Whiskey
  • .5 oz. Lustau Pedro Jimenez
  • .5 Barrel Aged Maple Syrup
  • 1 oz. Lemon Juice
  • 1 Drop saline
  • Egg White


In coupe glass, flame 4-5 dashes of Absinthe, white Pine Bitters and cinnamon. Combine all ingredients in shaker and do a reverse double shake. Before beginning the second shake, combine rosemary, absinthe, white pine bitters in a coupe glass and light with torch. Dash cinnamon in the flaming coupe while shaking second shake. Damp flaming condiments into the sink before double stirring into seasoned coupe glass.
Garnish with a  Rosemary tip
